A Symbol of Siberian Hospitality: A Taiga Dessert as an Element of Cultural Dialogue in Vienna

A culinary masterclass became a vibrant highlight of the “Sochi Dialogue” Forum’s educational programme in Austria, bringing together students and organizers to prepare a traditional Siberian delicacy.

The event was preceded by an introductory lecture on the role of cuisine in intercultural communication and the concept of “soft power.” The participants explored Russia’s gastronomic identity, with particular attention to the unique taiga region.

For the practical part of the programme, the participants prepared a classic taiga dessert — a delicacy traditionally made in Siberian villages from freshly gathered wild berries and other foraged ingredients. The recipe is based on a harmonious combination of three key gifts of the northern wilderness. The main ingredient is wild lingonberry, with its distinctive tartness, astringency, and rich vitamin content. Its vibrant berry flavour is complemented by natural honey, whose gentle sweetness balances the lingonberries’ sharpness. The finishing touch is provided by pine nuts, which add a delicate, buttery texture and a distinctive pine-and-nut aroma, transforming simple ingredients into a refined symbol of Siberian hospitality.

Traditionally, these ingredients are served fresh or with whipped sour cream and cream, turning simple gifts of the taiga into a delicious and wholesome dessert.

Preparing the taiga delicacy allowed Austrian schoolchildren not only to experience Siberia through its flavours, but also to engage with the living cultural heritage of Russia’s regions, demonstrating once again that culinary traditions remain one of the warmest and most accessible languages of international communication.
